I signed up to make breakfast at the co-op on Monday, because it’s low-stress and all the good cooking spots were taken and I liked making breakfast at Tank before. You just make some popovers or some pancakes and the 10 people who show up are grateful.
Unfortunately, now we also have to cater to those gluten-free people. I was gonna make vegan muffins (everyone loves muffins and I wouldn’t bother making ones with eggs because I bet we don’t even have any) but I guess I need to think about making something gluten-free, too?
So now I’m looking up gluten-free recipes and asking myself…WTF is xantham gum?
